Vegetarian Potato Recipe

800g baby potatoes
1 tablespoon salt
1 medium red onion
1 yellow bell pepper
1 red bell pepper
2 garlic cloves
1 chili pepper
2 tablespoons vegetable oil
100g spinach
Salt to taste
Directions
- Place baby potatoes in a saucepan, then add water just to cover the potatoes
- Add 1 tablespoon salt and cook for 10 – 15 minutes until fork tender
- As the potatoes are cooking. chop onion and bell peppers
- Dice garlic and chili pepper
- When potatoes are fork tender, drain potatoes and set aside
- Stir-fry your vegetables on medium high heat
- Add vegetable oil in a saucepan, then throw in the chopped onions and bell peppers
- Season with salt to taste and stir-fry for 2 minutes
- Add cooked potatoes and stir-fry for another 2 minutes
- Add diced garlic and chili pepper and continue to cook for 2 minutes
- Add a handful of spinach about 100g and sauté until all the spinach is wilted
- Ready to serve
