Tastiest Juiciest Chicken Roast Dinner

1½ kg Chicken
1 kg Baby potatoes
400 g Carrot
4 tablespoons Vegetable oil
30 g Butter
1½ teaspoon Salt
1½ tablespoons Honey
½ teaspoon Black pepper
1 sprig of rosemary
2 Garlic cloves (Finely chopped)
1 teaspoon Paprika
1 teaspoon Ginger powder
Directions
- Cut the potatoes and carrots into bitesize pieces and place in a baking tray
- Drizzle 2 tablespoons of vegetable oil on potatoes and carrots. Season with ½ teaspoon salt and ¼ teaspoon black pepper
- Add rosemary and chopped garlic. Then mix in seasoning in the tray and set aside
- Cut off the wing’s tips and tail of the chicken
- Cut through the chicken breast and spread chicken. Tenderize the chicken
- Season chicken with 1 teaspoon salt and ¼ teaspoon black pepper
- Drizzle 2 tablespoons of vegetable oil in pan and add butter to pan on medium high heat
- Place chicken in pan. Fry until golden brown 3-5 minutes. Press down chicken for better frying
- Flip chicken. Cook for another 3-4 minutes
- Transfer the remaining liquid in pan to a bowl. Add honey, paprika and ginger to the bowl to make a basting sauce for the chicken
- Baste sauce on chicken. Place chicken on potatoes and carrots in the baking tray
- Bake for 40-45 minutes at 350°F in a preheated oven
- Ready to serve.
