Secret to Soft Cinnamon Raisin Loaf

Ingredient

  • 180g Water (Lukewarm)

  • 14g Instant Dry Yeast

  • 150ml Milk  (Lukewarm)

  • 75g Caster Sugar

  • 3 Eggs

  • 750g Strong white bread flour

  • 90g Soft Butter

  • 240g Raisins

  • 1 Teaspoon Cinnamon

Directions

  • Pour the lukewarm water in a bowl
  • Add Instant dry yeast. Stir together
  • Add milk, sugar and eggs
  • Stir together. Add bread flour
  • Mix with dough hook attachment in a mixer
  • Mix to form a dough. Mix for 8 – 10 minutes until more elastic and smooth
  • Add raisin. Dough should be stretchy and elastic
  • Cover with cling film. Allow to proof for 1 hour or until double in size
  • Dust work surface with little flour. Tip out the risen dough
  • Stretch out dough. Divide dough.
  • Sprinkle some cinnamon powder on dough
  • Roll dough and place in a loaf pan lightly greased with butter
  • Cover with a tea towel and allow to proof for 60 minutes
  • Bake in a pre-heated oven at 175°C for 40 – 50 minutes
  • Ready! Brush with melted butter and allow to cool. ENJOY!
