Rack of Lamb with Hasselback Potatoes

Rack of Lamb with Hasselback Potatoes

Ingredients

  • 2 Rack of Lamb (1.2 kg)

  • 1 Kg Baby Potatoes

  • 1½ teaspoon Salt

  • ¾ teaspoon Black pepper

  • 2 Garlic cloves (Chopped)

  • 4 tablespoons Vegetable oil

  • sprigs of rosemary (Optional for presentation)

  • 8 Cherry tomatoes (Optional for presentation)

Directions

  • French the Rack of Lamb. See video guide below for How to French a Rack of Lamb
  • Score the fat side of the rack of lamb. Then season with ½ teaspoon salt and ¼ teaspoon black pepper
  • Hasselback Potatoes. Video below shows How to Hasselback potatoes
  • Place potatoes on a baking tray and drizzle 2 tablespoons vegetable oil on potatoes. Season with ½ teaspoon salt, ¼ teaspoon black pepper and chopped garlic
  • Drizzle 2 tablespoons vegetable oil on frying pan over high heat
  • Seal the rack of lamb for 2 minutes on fat side. Season the other side with the salt and black pepper
  • Flip and cook the other side for a minute
  • Place rack of Lamb together with the potatoes on the same baking tray
  • Place in a preheated 375°F oven and roast for 40-45 minutes
  • Ready to serve
