440g Salmon
100g Spinach
1 Medium Onions (Diced)
2 Garlic cloves (Diced)
375g Puff Pastry
2 Tablespoons Vegetable oil
100g Cream Cheese
1 Teaspoon Salt
1/4 Teaspoon white pepper
1 Egg for egg wash
Directions
- Pre-heat the oven to 200°C | 180°C fan assisted | 400°F
- Season salmon with salt and white pepper
- Heat oil in a non-stick pan over medium-high heat until hot
- Sear salmon on all sides about 2-3 minutes
- Remove salmon and Add the onions and garlic to same pan
- Season with salt and pepper
- Sauté for 2-3 minutes, then add the spinach and cook until wilted
- Using a sieve squeeze out excess water from spinach mix
- Add cream cheese to spinach and mix
- Place the salmon on puff pastry , then top with spinach cream cheese mixture
- Fold puff pastry over the salmon
- Flip puff pastry-wrapped salmon, score the top and egg wash
- Bake for 25 – 30 minutes
