620ml Milk (Lukewarm)
14g Instant Yeast
60ml Olive Oil
1000g Strong white bread flour, plus extra for dusting
30ml Honey
2.5g Salt
Directions
- Pour the lukewarm milk in a bowl
- Add Instant yeast. Stir milk and yeast
- Add Olive Oil and about 1/2 of Bread flour
- Mix to incorporate flour
- Add honey, the remaining bread flour and salt
- Mix to form a dough
- Dust work surface with little flour
- Knead dough for 10 minutes until more elastic and smooth
- Place dough in a bowl. Cover with cling film and let rise for about 1 hour
- Dust work surface with little flour. Tip out the risen dough
- Divide dough. Flatten, roll the dough on it’s self and sculpt to form a bloomer shape
- Place the bloomer on a baking tray lined with parchment paper
- Cover with dry clean tea towel and proof the dough for an hour
- Dust bloomer with flour. Make slashes across the top of the loaf with a razor
- Spray some water on bloomer
- Place a ramekin of water on the tray and bake in a pre-heated oven at 200°C for 35 minutes
- Remove from oven. Cool on a wire rack. Enjoy!
