Gingerbread Cookies Recipe for Christmas

140g Butter
140g Soft Brown Sugar
1 Teaspoon Baking soda
430g Flour
1 Egg
100g Black Treacle
1 Tablespoon Ground Ginger powder
1 Tablespoon Cinnamon powder
Directions
- Place flour into a bowl
- Add ground ginger, cinnamon and baking soda
- Mix together all dry ingredients
- Add soft brown sugar to soft butter in a bowl
- Cream with a hand mixer until light and fluffy
- Scrape down the bowl
- Add egg and continue to whisk together
- Add black treacle and continue to whisk together
- Add dry ingredients in two or three additions
- Combine by hand to form a dough
- Roll out the dough 5mm thick between two sheets of parchment
- Put in the fridge for 1 hour
- Cut out the cookies. Placed in a baking tray covered with parchment paper
- Bake in a pre-heated oven at 170°C for 8 – 10 minutes
