Ingredient

  • 140g Butter

  • 140g Soft Brown Sugar

  • 1 Teaspoon Baking soda

  • 430g Flour

  • 1 Egg

  • 100g Black Treacle

  • 1 Tablespoon Ground Ginger powder

  • 1 Tablespoon Cinnamon powder

Directions

  • Place flour into a bowl
  • Add ground ginger, cinnamon and baking soda
  • Mix together all dry ingredients
  • Add soft brown sugar to soft butter in a bowl
  • Cream with a hand mixer until light and fluffy
  • Scrape down the bowl
  • Add egg and continue to whisk together
  • Add black treacle and continue to whisk together
  • Add dry ingredients in two or three additions
  • Combine by hand to form a dough
  • Roll out the dough 5mm thick between two sheets of parchment
  • Put in the fridge for 1 hour
  • Cut out the cookies. Placed in a baking tray covered with parchment paper
  • Bake in a pre-heated oven at 170°C for 8 – 10 minutes
