2kg Whole Duck
1 Tablespoon Salt
1/4 Teaspoon White Pepper
Stuffing for Duck Cavity:1 Orange (Quartered)
2 Garlic
1 Onion (Quartered)
1 Apple (Quartered)
Glaze:1/4 Cup Honey
1/2 Fresh Juice of Orange
Directions
- Switch on the oven and set temperature to 175°C
- Score the skin on the duck’s breast in a diamond pattern
- Mix the salt and white pepper
- Season the duck and the cavity
- Stuff the cavity with orange, garlic, onions, and apple.
- Tie legs together with a cooking twine
- Cook duck on a rack in a roasting pan, breast side up for 1 hour
- After 1 hour, remove and flip duck. Cook for another 1 hour
- Add fresh orange juice to honey for the duck glaze
- Remove duck from oven. Increase oven heat to 200°C
- Brush with honey glaze
- Roast for another 10 minutes
- Ready to serve. Enjoy!
