Ingredients

  • 2kg Whole Duck

  • 1 Tablespoon Salt

  • 1/4 Teaspoon White Pepper


  • Stuffing for Duck Cavity:
  • 1 Orange (Quartered)

  • 2 Garlic

  • 1 Onion (Quartered)

  • 1 Apple (Quartered)


  • Glaze:
  • 1/4 Cup Honey

  • 1/2 Fresh Juice of Orange

Directions

  • Switch on the oven and set temperature to 175°C
  • Score the skin on the duck’s breast in a diamond pattern
  • Mix the salt and white pepper
  • Season the duck and the cavity
  • Stuff the cavity with orange, garlic, onions, and apple.
  • Tie legs together with a cooking twine
  • Cook duck on a rack in a roasting pan, breast side up for 1 hour
  • After 1 hour, remove and flip duck. Cook for another 1 hour
  • Add fresh orange juice to honey for the duck glaze
  • Remove duck from oven. Increase oven heat to 200°C
  • Brush with honey glaze
  • Roast for another 10 minutes
  • Ready to serve. Enjoy!
