2 Cucumber
1/2 Teaspoon Salt
- Vinaigrette Dressing:
3 Tablespoon Olive Oil
1 Tablespoon Distilled Vinegar
1 Tablespoon Wholegrain Mustard
1 Teaspoon Honey
Directions
- Cut off both ends of the cucumber
- Place cucumber between 2 sticks
- Cut one side straight
- Flip the cucumber over and cut at a 45° angle
- Add the salt to the cucumber
- Cover and allow cucumber to salt for 10 – 15 mins
- Meanwhile make the salad dressing
- Mix distilled white vinegar, olive oil, wholegrain mustard and honey
- Squeeze a little to remove more moisture
- Serve and top with dressing
