Ingredient

  • 500g Dates (Chopped)

  • 1 Cup Water (Hot Boiled)

  • 2 Teaspoon Baking Soda

  • 1 Cup Fresh Orange Juice

  • 200g Brown Sugar

  • 1 Teaspoon Salt

  • 80g Olive Oil

  • 2 Teaspoon Vanilla

  • 2 Eggs

  • 420g Plain Flour

  • 1 Teaspoon Baking Powder

  • 200g Walnut

Directions

  • Pour the dates in a bowl
  • Add hot water and baking soda
  • Mix together. Allow to cool for 10 to 15 minutes
  • Add fresh orange juice, brown sugar and salt
  • Add olive oil and mix together
  • Add vanilla, eggs, plain flour and baking powder
  • Mix together and add walnut
  • Mix together. Transfer to loaf pans greased and dusted with flour
  • Tap the pan on counter to settle the batter
  • Bake in a preheated oven at 175°C for 45 – 50 minutes and a cake tester inserted into the center comes out clean
  • Allow to cool in tin for 10 minutes
  • Then transfer to cool completely on a wire rack
