Dates Nut Loaf Recipe

500g Dates (Chopped)
1 Cup Water (Hot Boiled)
2 Teaspoon Baking Soda
1 Cup Fresh Orange Juice
200g Brown Sugar
1 Teaspoon Salt
80g Olive Oil
2 Teaspoon Vanilla
2 Eggs
420g Plain Flour
1 Teaspoon Baking Powder
200g Walnut
Directions
- Pour the dates in a bowl
- Add hot water and baking soda
- Mix together. Allow to cool for 10 to 15 minutes
- Add fresh orange juice, brown sugar and salt
- Add olive oil and mix together
- Add vanilla, eggs, plain flour and baking powder
- Mix together and add walnut
- Mix together. Transfer to loaf pans greased and dusted with flour
- Tap the pan on counter to settle the batter
- Bake in a preheated oven at 175°C for 45 – 50 minutes and a cake tester inserted into the center comes out clean
- Allow to cool in tin for 10 minutes
- Then transfer to cool completely on a wire rack
