The Crispiest Fried Cod

Ingredients

  • 440g Cod fillet

  • 1/3 Cup Corn flour

  • 1/3 Cup Plain flour + 2 Tablespoon for Coating

  • 1 Teaspoon Salt

  • 1 /4 Teaspoon White pepper

  • 1/4 Teaspoon Turmeric

  • 3/4 Cup Chilled Sparkling Water

  • Vegetable Oil for frying

Directions

  • Mix corn flour, plain flour, salt, white pepper, turmeric and sparkling water in a bowl to form a batter.
  • Pat cod dry with paper towel.
  • Coat fish with plain flour.
  • Coat fish with batter
  • Remove excess batter from fish
  • Fry for 5 – 8 minutes, depending on the thickness of the fish.
  • Flip cod for even frying as you cook
  • Ready. Serve and ENJOY!
