How to Make Easy One-Pot Beef Stew

Ingredients:

  • 400g Sirloin beef, cubed

  • Salt and pepper, to taste

  • 1 tbsp vegetable or olive oil

  • 1 small onion, chopped

  • 2 cloves garlic, minced (or 1 tsp garlic powder)

  • 2 cups beef broth

  • 1 Sweet red pepper (blended) or 1 tbsp tomato paste

  • 1 tsp dried thyme

  • 2 carrots, chopped

  • 2 potatoes, chopped

  • 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)

Directions

  • Season Sirloin Beef with salt and pepper
  • Heat oil in a large pot.
  • Brown beef cubes for a few minutes
  • Add onion. Cook for 2–3 minutes.
  • Add garlic and thyme. Cook for 2–3 minutes.
  • Add carrots. Cook for 2–3 minutes.
  • Add sweet red pepper. Cook for 2–3 minutes.
  • Add broth. Bring to a boil, then reduce to a simmer.
  • Add potatoes. Cover and cook on low heat for 30 to 40 minutes, or until beef is tender and vegetables are cooked.
  • Mix cornstarch and water, then stir into the stew.
