- CHRISTMAS STUFFING
6 Slice of White Bread
1 Onion
1 Teaspoon Mixed Herbs
1/4 Teaspoon Salt
1/4 Teaspoon Black pepper
113 g Butter (Melted)
120 g Dried Mixed Fruits
- ROASTED SHOULDER OF LAMB
1.2 Kg Shoulder of Lamb
2 Teaspoon Salt
1/2 Teaspoon Black pepper
Christmas Stuffing
5 Carrots (Chunk cut)
2 Red Onions (Chunk cut)
Vegetable oil
2 Garlic cloves
4 sprigs of rosemary
8 Cherry tomatoes (Optional for presentation)
Directions
- To make Christmas Stuffing. Blend bread in a food processor
- Chop the onion, add Mixed Herbs, Salt, Black pepper and melted butter
- Mix to combine then add mixed fruit and mix until it holds together
- Season shoulder of lamb with salt and black pepper
- Place stuffing. Roll lamb to enclose stuffing
- Secure firmly with kitchen twine
- Roast on a bed of carrots, red onions and rosemary
- Brush with vegetable oil and season
- Place in a preheated 325°F oven and roast for 3 hours if you like it well done
- Ready to serve
