Ingredients

  • 350g Self-raising flour (Extra for dusting)

  • 1 teaspoon Baking powder

  • A pinch Salt

  • 85g Butter

  • 45 g Golden Caster Sugar

  • 3/4 Cup of Milk

  • Egg (for egg wash)

Directions

  • Pre-heat the oven to 220°C/200°C fan/gas 7.
  • Sift Self-rising flour, baking powder and salt into a bowl.
  • Add sugar and mix together
  • Cut Butter into small cubes and rub into the flour until it looks like breadcrumbs.
  • Make a well in the dry mix and add milk
  • Mix to form a dough
  • Dust surface light with flour. Roll out to about 2cm thick.
  • Cut out Scones with a 7cm heart cutter.
  • Combine leftover dough and cut more Scones.
  • Place in a pastry tray lined with parchment paper
  • Egg wash the scones and bake for 15 minutes
  • Bake for 15 minutes.
  • When ready, Transfer to a wire cooling rack.
  • Cut out in the middle with a large round piping nozzle
  • Fill scones with strawberry jam. Dust with icing sugar
