113g Soft Butter
100g Brown Sugar
30g Sugar
1 Egg
1 Teaspoon Vanilla
90g Self raising Flour
1/2 Teaspoon Baking Soda
1 Teaspoon Cinnamon
Pinch of Salt
135g Oats
1/2 Cup Raisins
Directions
- Soak raisins in warm water for 10- 15 minutes
- Place soft butter in a bowl
- Add brown and white sugar
- Cream with a hand mixer until smooth
- Add the egg
- Scrape down the bowl
- Add vanilla extract
- Sift in flour, salt, cinnamon and baking soda
- Mix batter until combined
- Add the oats and drained raisins
- Mix batter until combined
- Cover and chill the dough for 30-60 minutes in the fridge
- Roll dough into balls
- Place in the air fryer oven. Bake at 170°C for 12 to 15 minutes
- Remove and allow to cool on the baking sheet
