Irish Fisherman’s Tomato Fish Stew

📝 Ingredients:

  • 2 tbsp olive oil

  • 1 onion, finely chopped

  • 2 garlic cloves, diced

  • 2 carrot, chopped

  • 3 tomatoes, chopped

  • 500 g mixed fish (cod, haddock, hake, salmon, or pollock)

  • 2 medium potatoes, cubed

  • 2 cups broth

  • Salt and freshly ground black pepper to taste

  • a sprig of fresh thyme

  • 1/2 lemon juice

👩‍🍳 Instructions:

  • Heat olive oil in a pot over medium heat. Add onion, garlic. Cook gently for 5 minutes until soft
  • Season with salt and black pepper
  • Stir in carrots, and tomatoes. Cook for 5–8 minutes until tomatoes break down.
  • Add broth, potatoes and thyme. Cook for 3-5 minutes until potatoes are cooked.
  • Add the fish mix. Season, lemon juice, and simmer gently for 7–8 minutes until fish is cooked through and flakes easily.
