Secret to Soft Cinnamon Raisin Loaf

180g Water (Lukewarm)
14g Instant Dry Yeast
150ml Milk (Lukewarm)
75g Caster Sugar
3 Eggs
750g Strong white bread flour
90g Soft Butter
240g Raisins
1 Teaspoon Cinnamon
Directions
- Pour the lukewarm water in a bowl
- Add Instant dry yeast. Stir together
- Add milk, sugar and eggs
- Stir together. Add bread flour
- Mix with dough hook attachment in a mixer
- Mix to form a dough. Mix for 8 – 10 minutes until more elastic and smooth
- Add raisin. Dough should be stretchy and elastic
- Cover with cling film. Allow to proof for 1 hour or until double in size
- Dust work surface with little flour. Tip out the risen dough
- Stretch out dough. Divide dough.
- Sprinkle some cinnamon powder on dough
- Roll dough and place in a loaf pan lightly greased with butter
- Cover with a tea towel and allow to proof for 60 minutes
- Bake in a pre-heated oven at 175°C for 40 – 50 minutes
- Ready! Brush with melted butter and allow to cool. ENJOY!
