- DOUGH STARTER :
100ml Milk (Lukewarm)
14g Instant Dry Yeast
30g Caster Sugar
40g Honey
100g Strong white bread flour
- DOUGH:
700g Strong white bread flour
300ml Milk (Lukewarm)
10ml Vanilla
200g Egg yolk
160g Caster Sugar
300g Soft Butter + 20g Butter for the top
400g Dried mixed fruit with cherries
Directions
- To make dough starter. Pour the lukewarm milk in a bowl
- Add Instant dry yeast. Stir milk and yeast
- Add sugar, honey and bread flour
- Mix together to incorporate
- Cover with cling film and allow to proof for 30 – 45 minutes
- Pour bread flour into a mixer bowl
- Add milk, and dough starter. Mix with dough hook attachment
- Mix in egg yolk. Add sugar, butter and vanilla
- Mix to form a dough. Mix for 8 – 10 minutes until more elastic and smooth
- Mix in dried mixed fruit with cherries.
- Cover with cling film. Allow to proof for 1 hour or until double in size
- Dust work surface with little flour. Tip out the risen dough
- Divide into 2 equal dough. Shape and place in panettone paper mold 11 by 15 cm
- Proof for 60 to 90 minutes in the kitchen until double in size
- Slash across the top with a razor. Place butter on the top
- Bake in a pre-heated oven at 170°C for 50 – 60 minutes
