500g Sponge Cake mix
1/4 Teaspoon Turmeric powder
100ml Lemon Juice (2 Medium Lemon)
3 Eggs
100g Raspberries
Directions
- Preheat oven to 180°C
- Pour sponge cake mix in a bowl
- Add zest of 1 Lemon and turmeric and mix
- Add 100ml lemon juice, eggs and whisk together
- Scrape down the bowl and continue to mix until combined
- Transfer to a pan greased with butter and then dust with flour
- Top with fresh raspberry
- Bake for 20-25 minutes
- When Ready! Remove from pan and cool on a wire rack
- Cut into portions and serve
