Ingredient

  • 2 Cucumber

  • 1/2 Teaspoon Salt

  • 3 medium Spring onions

  • 2 Garlic cloves

  • 3 Tablespoon Greek Yogurt

  • 1 Tablespoon Olive oil

Directions

  • Cut cucumber with a mandolin slicer
  • Add the salt to the cucumber and mix
  • Allow cucumber to salt for 10 – 15 mins
  • Meanwhile chop the spring onions
  • Chop the garlic
  • Salt draws out the moisture from the cucumber by osmosis
  • Put cucumber in a sieve and squeeze to remove moisture
  • Add the spring onions and the garlic
  • Add Greek yogurt and olive oil
  • Mix and is Ready to serve.
